I buy a ridiculous amount of cookbooks. I know that I can search online for recipes, but I look forward to a good cookbook page turner the way some folks enjoy a juicy novel. These days though - it is rare to find something truly original. There are only so many ways to use apple cider vinegar in a salad dressing or various forms of coconut for desserts.
I had been looking for more ideas for my CSA root vegetable overabundance when I chanced upon a review of Ali Maffucci's new cookbook Inspiralized.
It has been a long time since I have seen ideas this fresh, and my spiralizer just happens to be my current favorite kitchen gadget. The cookbook is written by someone like you and me who is not trained as a chef and simply likes to experiment in the kitchen. Her recipes are easy to follow and oh so creative.
I decided to make her vegetable spiralized "rice" this morning. I grabbed a sweet potato today, but she details how to use just about every root vegetable on earth to create a similar "rice" dish. It took me less than 10 minutes and will be the perfect side for some leftover chicken I have for dinner.
